Hallelujah. My husband barbecued drumsticks last night with a unique and delicious taste, thanks to a recipe in Jennifer Chandler’s new book, Simply Grilling.
Don’t misunderstand. Tony is an expert grill guy, but his barbecue sauce tends toward traditional tomato, vinegar, and spices. Chandler’s recipe called “Chicken Drumsticks with Mustard BBQ Sauce” combines prepared yellow mustard, apple cider vinegar, brown sugar, dry mustard, and cayenne. I loved the mustard-centric flavor and how the sauce complements the meat, instead of overpowering it. My sorry photo doesn't do much to capture how great this meal tasted. So you'll have to try making it yourself.
Tony also followed Chandler’s recipe for shucked corn on the cob. He typically grills corn in the husks, but this technique lets the smoky taste of the mesquite filter into the kernels. Thumbs up, from both of us.
Chandler’s book, the third in her “Simply” series, is being released this week. Even a quick perusal through the chapters promises plenty of action this summer for grilling outdoors with charcoal or gas or indoors with cast iron. Even better, her recipes move beyond grilled meat, offering suggestions for seafood (halibut with cherry tomato salad), sandwiches (banh mi with grilled pork), and desserts (chocolate hazelnut and banana panini).
Simply Grilling includes 105 easy-to-follow recipes that help demystify grilling for cooks who are more comfortable with a stovetop. The color photographs by "Chubby Vegetarian" blogger Justin Fox Burks also are beautiful.
